Cranberry Walnut Pie

It's such an amazing treat to be able to get fresh cranberries from my friend Judy at Simon's Berry farm about 45 minutes from our farm. While she belongs to the Ocean Spray cooperative as most cranberry farmers in the state do she can still sell a few to people like me.

New Jersey ranks 3rd in cranberry production bringing in about 614,000 barrels of those ruby red berries. It always amazing me how high New Jersey is ranked in production of many things like cranberries or even peaches where we're ranked 4th in the nation. That is insane considering how small of a state we are how densely populated we are.

This pie is a Thanksgiving tradition and one I hope you will also love!

Holly Haines Cranberry Nut Pie
"Sourced from the American Cranberry Growers Assoc. Favorite Cranberry Recipes"
2 cups Cranberries
1/2 cup walnuts, chopped
1/2 cup sugar

Mix these 3 ingredients together and spread in the bottom of a greased 10 inch pie plate.

1 cup flour
1 cup sugar (I usually make this 1/2 cup just to cut down on the sugar a little bit)
3/4 cup melted butter
2 eggs
2 tsp. almond extract

Mix together these five ingredients.  Pour over the cranberry mixture.  Bake 55-60 minutes (it only took me 50 minutes) in a 325 oven. It will be slightly brown on top.
