Bunless BLT


Bunless BLT's are so simple.  So delish.  Add a little Sriracha Mayo....and it's the ultimate summer lunch.

Supplies:
1 head Butterhead or Head Lettuce
Bacon, cooked until crisp
1-2 tomatoes, thinly sliced (late spring choose hothouse tomatoes/summer and early fall choose heirlooms)
Tooth Picks
Additional bacon broken into 1 inch pieces (one piece per BLT)
  • Spicy Mayo:  
    •  1/2 cup mayo (the book Well Fed (paleo cookbook) has a great homemade mayo recipe if you're feeling ambitious!)
    • 1 tablespoon Srirachi Sauce
    • Juice squeezed from 1/2 a lime
Method:
Wash and carefully tear off full lettuce leaves - dry completely.  Get the bacon cooking while you are slicing tomatoes.  Next mix all of the Spicy Mayo ingredients together - you can play a little bit the with the amounts if you want more or less spice. 

After everything is torn, cooked, and sliced, assemble your BLT.  I did two tomato slices and two bacon strips per wrap.  When you are ready to roll have your tooth pick and 1 inch bacon piece handy.  The piece of bacon will help to keep the tooth pick from ripping through the lettuce.  Refer to picture below to get a better idea.
